Yesterday was the grayest of gray days. ~
It will take some serious comfort food to chase away the gloom. What could be hardier than an old fashioned root vegetable beef stew?
All it takes is some stewing beef from grass fed cows, a little organic, whole wheat flour, some sea salt and fresh ground pepper to get started. Dredge the stewing beef in the the flour and spices and brown in some oil. I've used coconut oil and a bit of butter to brown mine. ~
Toss in some onions ~
and a good splash of red wine. ~
Start adding whatever root veggies you have on hand. I've used potatoes, sweet potatoes, carrots and squash. Turnip or squash are essential to give this meal it's earthy flavour! Some parsley, a bay leaf (remove before serving) and some rosemary crank it up another notch.~
A combination of beef stock and water is added to barely cover the vegetables. Bring to a boil, reduce heat to low, cover and let it all simmer for a couple of hours. ~
Grab an old fashioned fork and ironstone bowl, with a hot from the oven biscuit, and dig in! ~
The snow began to fall and by morning we have the Christmas spirit in the yard! ~

ReplyDeleteLove beef stew and yours is perfect for that snowfall sitting outside in your yard! Stay indoors and cook up your own 'seasoned' and seasonal storms, I say! I throw in one or two bay leaves, all spice and a cinnamon stick for a beautiful bouquet of flavour!

Looks yummy! I made two kinds of soup on Monday and that's what we are eating for lunch and dinner this week. Until tomorrow (turkey day). I told my husband this is the best way to eat vegetables - cooked in broth and herbs. Yum yum. I'll try your beef stew next!
ReplyDeleteThis looks so delicious, just like my mother and grandmother used to make. I try to make it the same but you've just reminded me that I keep forgetting to put a bay leaf in, which is a bit ridiculous because I have a massive bay tree in the garden.

ReplyDeleteWe love beef stew! I was thinking about buying some stew meat tomorrow. Ontario sure has a lot of snow right now. We're still getting rain and wind here and it's 14! It's supposed to drop to 2 by tomorrow morning. I love the pretty shrub with the red berries. Have a cozy evening.

ReplyDeleteStew is a firm favourite here in winter cheap and hearty, my Irish nana made the best stew try as I might I've never been able to replicate it she served hers with soda bread. The tree with the red leaves is just gorgeous!
